This boiler consists of an internal working tank and a steam-water jacket around it. The boiler contents are heated by a steam-water jacket. A heat electric heater is built into the boiler jacket. Working liquid (water) is poured into the boiler jacket, which is heated from the heating element, and boiling, transfers heat to the contents of the boiler (as a result of condensation of the resulting steam and, as a result, highly efficient transfer of heat energy through the common wall of the boiler and jacket). There is no direct contact between the heating element and the contents of the boiler, which gives a many of indisputable advantages in relation to direct heating by heating elements. With steam-water heating, caramelization or burning of the heated solution (wort, mash) is completely excluded, which cannot be said about the direct heating of the contents by heating elements. With a sufficiently high input electric power consumption of the heating element (the temperature on the surface of the heating element itself can reach 450C. The surface of the heater in the case of steam-water heating is equal to the area of the walls of the working tank of the boiler (which is an order of magnitude higher than the working area of the heating element itself), moreover, due to the uniform distribution of heat energy over the entire area, the maximum temperature of the boiler wall does not exceed 115C

Note: The larger the surface area of the heater, the lower its surface temperature, at the same power consumption. In fact, steam-water heating increases the contact surface area built into the jacket of the electric heating element. As a result, we get better heating, no risk of burning the wort, and as a result, ease of cleaning and washing the boiler after work.
